cake decorating - recipes

february is the month of love. valentine's day encourages us to freely share the love within our hearts. but what about our stomachs? it deserves some attention as well. 
when creating this month's menu, we chose to focus on the foods we adore: pizza, cake, chocolate dipped fruit, and coca-cola. 
chocolate fudge cake
1 package Devil's food cake mix
1 package vanilla pudding
1 cup sour cream
1 cup milk
1/2 cup vegetable oil
1/2 cup water
4 eggs
preheat the oven to 350 degrees. grease and flour round cake pans. combine cake mix, pudding, sour cream, milk, oil, water and eggs. beat for four minutes. bake for approximately 50 minutes. cool 10 minutes in pan. enjoy!
grandma bender's white cake
2 eggs, slightly beaten
1 cup sugar
1 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 tbsp butter
1 tsp vanilla
add sugar to beaten eggs and beat slightly. sift flour, baking powder and salt. add to egg mixture and mix well. melt butter in milk and add to egg and flour mixture. add vanilla and mix. 
bake in greased round pan in a 350 degree oven for 15 to 20 minutes. enjoy!
pizza dough
7 cups flour
2 teaspoons sugar
5 teaspoons salt
2 3/4 warm water
2 packages active dry yeast
5 tablespoons olive oil
Mix flour, sugar and salt in a large bowl. In smaller bowl whisk together water and yeast, until yeast dissolves. Add olive oil, and pour over dry ingredients. Use a rubber spatula and mix together until dough is wet and raggedy. Place dough in clean and well oiled bowl. Leave in warm spot for 1 hour. After 1 hour, with a well oiled hand punch risen dough to deflate and let rest for 30 more minutes. When you are ready to use, place dough on well floured surface and divide into 3 balls. Cover each ball with plastic wrap and let sit for 10 more min. When done, use a rolling pin (or hands) to stretch to desired shape.  Place on parchment paper on cooking sheet. Bake at 450 degrees for 8-10 minutes or until crust is golden brown and cheese is bubbly. 
 potato pizza topping
8 ounces fingerling potatoes
2 lemons, juiced
coarse salt
1/2 cup extra virgin olive oil
1 pound cipollini onions
1 tbsp fresh rosemary
4 oz goat cheese
flaky sea salt
Slice potatoes very thin (with mandoline) and place in bowl, pour lemon  juice over and add salt.  Heat large skillet over medium heat and add one tablespoon oil. add onions and stir to coat. Reduce heat to low and cook for 10 minutes.  Season onions with coarse salt and cook stirring frequently until rich brown in color.  45-60 minutes.  If onions begin to stick add a little water. Remove from heat and cool. Heat oil and and rosemary in small saucepan over low heat for 15 minutes (do notlet boil) Let cool and pour through fine sieve into bowl brush dough with rosemary oil and place half the onions on pizza. Drain potatoes and discard lemon juice. Cover onions with half the potatoes.  Crumble half  the goat cheese over potatoes.

Mozzarella (fresh, sliced)
Pecorino-Romano
freshly ground black pepper
Spread ricotta cheese on top of crust. Pepper.  Take slices of mozzarella and place on top of ricotta. Crumble goat cheese on top, and sprinkle Pecorino-romano on top. Bake.
 margherita pizza topping
sliced ripe tomatoes
fresh basil
fresh mozzarella, sliced
olive oil
Brush Pizza with olive oil, place tomatoes and basil alternating in rows. Place mozzarella on top of tomatoes and basil.
prosciutto and sun-dried tomato pizza topping
Prosciutto, thinly sliced
Sun-dried Tomatoes 
Pizza sauce
Mozzarella (shredded)
Spoon pizza sauce on crust spread evenly. Place prosciutto slices on top of sauce, followed by sundried tomatoes. Sprinkle Mozzarella on top and bake.
 blood oranges with dark chocolate

line a baking tray with baking paper. peel oranges, removing as much pith as possible. carefully separate, being careful not to break the skin. heat chocolate in microwave. once chocolate is melted, dip an orange segment into the bowl. jiggle the orange so that the excess chocolate falls back into the bowl. lay on baking paper. let set at room temperature for one hour before eating.

white chocolate
semi-sweet chocolate
combine crumbled cake tops and buttercream frosting until you get a thick consistency. roll into balls and place in freezer over night. dip balls in white chocolate and decorate with semi-sweet chocolate. enjoy!
